Use up the last of the Christmas turkey and

Eat healthy again after a week of rich food

So here is my “throw it all in “ spicy turkey left over chunky soup”


1 chopped onion

1 stick of chopped celery

1 chopped red pepper

2 sliced carrots

2 inches of chopped chorizo sausage

Any left-over turkey

A pinch of cayenne pepper

1 ½ pints of chicken or turkey stock

2 handfuls of green leafy vegetables (kale, spinach or cabbage)




  1. Chop onion, celery, carrots, pepper
  2. Slice chorizo thinly and then chop each slice into 4
  3. Gently sautee chorizo with chopped onion, celery and carrots until they soften but not brown
  4. Add turkey and chopped red pepper along with stock and cayenne pepper.
  5. Gently simmer until carrots or softer but still with bite
  6. Add the chopped greens and simmer for 2-3 minutes more
  7. Serve
